I’m super excited to share with you my first recipe post! This is the first of a series of homemade recipes that I plan share from my mom’s cookbook.
One of my fondest memories as a kid was helping my mom prepare delicious home cooked meals for the whole family to enjoy. She was passionate about cooking. I remember her spending many hours in the kitchen perfecting her recipes, and experimenting with new ingredients and cooking methods.
To help me heal from my grief, I decided to try some of the summer recipes from her collection, and talk about the process of making them. This is the first in a series of easy homemade recipes that I plan to write about in my Mom’s Recipe Page of my blog. I hope you enjoy!
Recipe for Penne Pasta and Herb
One of those recipes I would like to share with you is a simple and easy Penne Pasta with Herb. This recipe is perfect for summer! It’s super simple, healthy and delicious.
2 lbs of plum tomatoes diced
1/4 cup of olive oil
1/4 cup of fresh basil
1/4 cup of green onions
1/2 tsp of salt
1/2 tsp of pepper
How to Make
Step 1: Cook 1 lb of penne pasta according to the package directions. Drain the penne and pour onto plate or large bowl.
Step 2: Dice 2 lbs of plum tomatoes. Add to mixing bowl.
Step 3: Finely chop 1/4 cup of fresh basil. Add to bowl with tomatoes.
Step 4: Dice 1/4 cup of green onions (scallions). Add to bowl with tomatoes and basil.
Step 5: Add 1/2 tsp of salt and pepper to ingredients in bowl.
Step 6: Add 1/4 cup of olive oil to ingredients in bowl.
Step 7: Mix ingredients in bowl and let sit for a couple of minutes.
Step 8: Add 1 lb of penne pasta to ingredients and top with parmesan cheese
